You do not need a fancy rotisserie spit to make amazing gyros at home. This recipe uses ground beef and lamb mixed with warm spices like cumin and cinnamon to get that classic flavor everyone loves. It is a fantastic option for a busy weeknight when you want something fun and flavorful.

My sister helped me realize that a sheet pan is the perfect tool for this. Just press the seasoned meat into a flat layer, bake it until it is perfectly browned, and slice it into strips. It is so easy to clean up and gives you that crispy texture you find at your favorite Greek spot.

🧺 Ingredients

  • 1 pound lean ground beef
  • 1 pound ground lamb
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Pita bread, for serving
  • Tzatziki sauce, for serving
  • Diced tomatoes, cucumbers, and red onion, for serving
  • Crumbled feta cheese, for serving

    Preheat your oven to 400 degrees F and line a large rimmed sheet pan with parchment paper.

    In a large bowl, combine the beef, lamb, garlic, oregano, cumin, cinnamon, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

    Transfer the meat to your prepared sheet pan and press it into an even layer that reaches almost to the edges of the pan.

    Use a butter knife to score the meat lengthwise down the middle, then crosswise into 1 inch wide strips. Lightly brush the top with olive oil.

    Bake for 15 to 20 minutes on the upper rack until the meat is browned and cooked through.

    Remove the pan from the oven and carefully pour off any excess fat. Re cut along your original score lines to create strips and serve immediately in warm pitas with your favorite toppings.

💡 Tips

Store leftover meat in an airtight container in the fridge for up to 3 days. To serve, warm the strips quickly in a skillet to get them crispy again. These gyros are great served in pitas or over a bowl of fluffy rice.
