This chicken and green bean skillet is one of my favorite go to recipes when I need to get dinner on the table in a hurry. It relies on fresh ingredients and simple seasoning to create a meal that tastes like you spent hours in the kitchen even though it comes together in under thirty minutes.

My best tip for this recipe is to make sure your chicken pieces are cut to a similar size so they cook through at the same time. If you have any leftovers, they keep well in the fridge for a quick lunch the next day.

🧺 Ingredients

  • 1 pound chicken breast, cut into bite size pieces
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice

    Pat the chicken pieces dry with a paper towel and toss them in a bowl with the paprika, onion powder, oregano, salt, and pepper.

    Heat the olive oil in a large skillet over medium high heat.

    Add the chicken to the pan and cook for about five to six minutes until browned and cooked through. Remove the chicken from the pan and set it aside on a plate.

    Add the fresh green beans to the same skillet. If the pan looks dry, add a tiny splash of water or a little more oil. Sauté the beans for about five to seven minutes until they are tender yet still crisp.

    Stir the minced garlic into the beans and cook for one minute until fragrant.

    Add the chicken back into the pan with the beans and toss everything together to warm through.

    Squeeze the lemon juice over the top just before serving to brighten up all the flavors.

💡 Tips

Serve this dish over a bed of fluffy white rice or quinoa to soak up the juices. You can store leftovers in an airtight container in the refrigerator for up to three days.
