This slow cooker ramen is one of my favorite go to meals for busy weeknights when I want something warm and filling without standing over a stove. It combines savory beef, colorful veggies, and slurpy noodles in a broth that tastes so much better than the instant kind you might be used to.

You can easily make this recipe your own by tossing in whatever vegetables you have in the fridge or adjusting the heat level to suit your family. It is a simple, cozy meal that always hits the spot.

  • 2 packages ramen noodles, seasoning packets discarded (save just 1)
  • 1 pound lean ground beef
  • 1 1/2 cups sliced bell peppers
  • 1 1/2 cups matchstick carrots
  • 3 cups low sodium beef broth
  • 1/2 cup hoisin sauce
  • 1/3 cup brown sugar
  • 1/4 cup low sodium soy sauce
  • 3 tablespoons cornstarch
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • 1 to 2 teaspoons sriracha
  • Sesame seeds for garnish
  • Sliced green onions for garnish

    Heat a large skillet over medium high heat and brown the ground beef until no pink remains, then drain off the excess grease.

    Transfer the cooked beef to a 4 to 6 quart slow cooker and add the bell peppers and carrots.

    In a medium bowl, whisk together the beef broth, hoisin sauce, soy sauce, brown sugar, cornstarch, rice vinegar, garlic, ginger, sriracha, and one of the ramen seasoning packets.

    Pour the sauce mixture over the beef and vegetables in the slow cooker.

    Cover and cook on high for 1 to 2 hours or on low for 3 to 4 hours.

    About 10 minutes before serving, add the ramen noodles to the slow cooker, cover again, and cook until the noodles are tender.

    Stir everything well and serve hot, garnished with sesame seeds and fresh green onions.

๐Ÿ’ก Tips

Store any leftovers in an airtight container in the fridge for up to 3 days. To serve, simply reheat on the stovetop with a splash of extra broth if the noodles have soaked up too much liquid. Feel free to top your bowl with a soft boiled egg for a bit of extra protein.
