If you love the crispy edges of a smash burger but want something a bit different for dinner, this is the perfect recipe. It is a fantastic way to feed a crowd without spending all night standing over the stove.

My favorite thing about these is how the tortilla gets nice and crispy in the rendered beef fat. Just make sure your pan is good and hot before you add the meat so you get that lovely golden brown crust.

  • 1 pound ground beef
  • 8 small flour tortillas
  • 8 slices American or cheddar cheese
  • 1/2 cup finely diced white onion
  • 1/2 cup shredded lettuce
  • 1/4 cup pickles, chopped
  • 1/4 cup burger sauce or ketchup and mustard mix
  • 1 tablespoon vegetable oil
  • Salt and black pepper to taste

    Divide the ground beef into eight equal portions and roll them into loose balls.

    Heat a large skillet or griddle over medium high heat with a tiny bit of oil.

    Place a tortilla on your work surface and put a ball of beef right in the center.

    Press the ball down firmly with a spatula so it flattens out across the surface of the tortilla.

    Place the tortilla meat side down into the hot pan.

    Cook for about 2 to 3 minutes until the beef is browned and crispy.

    Flip the taco over and place a slice of cheese on top of the beef.
