Easy Tin Foil Sausage and Veggies
A colorful and fuss free dinner that packs smoky sausage and fresh vegetables into handy foil packets for easy cleanup.
recipesbynani.comThis meal is one of my absolute favorites for busy weeknights because it is so simple to put together. You just chop everything up, toss it with some seasonings, and let the oven do all the hard work while you relax.
I love that you can customize this based on what you have in your fridge. If you want to make it even easier, you can prepare the packets ahead of time and keep them in the fridge until you are ready to start cooking.
๐งบ Ingredients
- 1 pound smoked sausage, sliced into rounds
- 2 medium potatoes, cut into bite sized chunks
- 1 zucchini, sliced into half moons
- 1 bell pepper, chopped
- 1 cup frozen corn
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and black pepper to taste
๐ฉโ๐ณInstructions
- 1
Preheat your oven to 400 degrees Fahrenheit.
- 2
In a large mixing bowl, combine the sliced sausage, potatoes, zucchini, bell pepper, and corn.
- 3
Drizzle the olive oil over the mixture and sprinkle with the garlic powder, oregano, salt, and pepper. Toss everything until well coated.
- 4
Lay out four large sheets of heavy duty aluminum foil on your counter.
- 5
Divide the sausage and vegetable mixture evenly among the center of each foil sheet.
- 6
Fold the sides of the foil up and over the food to create sealed packets, making sure there is a little room inside for steam to circulate.
- 7
Place the packets on a baking sheet and bake for 25 to 30 minutes, or until the potatoes are tender.
- 8
Carefully open the packets to let the steam escape before serving warm.
๐ก Tips
Serve these right in the foil packets to save yourself from washing extra dishes. If you have leftovers, you can store them in an airtight container in the fridge for up to three days. These reheat very well in the microwave or a warm oven.
