Tabouli is a classic Middle Eastern salad that focuses on fresh parsley and bright flavors. It is light, healthy, and incredibly refreshing on a warm day.

My secret to the best tabouli is letting the cracked wheat soak in the lemon juice and olive oil mixture. This helps the grain soften up while soaking in all those delicious citrus notes before you add the fresh vegetables.

  • 1/2 cup fine bulgur wheat
  • 1 cup boiling water
  • 2 cups finely chopped fresh curly parsley
  • 1/2 cup finely chopped fresh mint leaves
  • 3 medium tomatoes, diced
  • 1 cucumber, finely diced
  • 4 green onions, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1/3 cup fresh lemon juice
  • Salt and black pepper to taste
