If you love the simple combination of tomato, basil, and mozzarella, you will fall for this salad. It takes those classic flavors and makes them into a filling meal by adding tender chicken and buttery avocado, all tied together with a tangy balsamic dressing.

This is my favorite go to meal during the summer when tomatoes are at their best. If you cannot get to the grill, you can easily cook the chicken in a skillet on the stove or use a pre cooked rotisserie chicken to save some time.

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 6 cups chopped romaine lettuce
  • 1 cup fresh mozzarella pearls
  • 1 pint cherry tomatoes, halved
  • 1 large avocado, diced
  • 1/4 cup fresh basil leaves, sliced into thin ribbons
  • 1/4 cup balsamic glaze or dressing
