This cilantro lime chicken is one of my go to recipes when I want something healthy and light but full of flavor. The lime juice tenderizes the meat while the fresh cilantro adds a wonderful pop of color and freshness that everyone in the family enjoys.

I find that letting the chicken marinate for at least thirty minutes makes a big difference in the taste. If you have extra time, feel free to leave it in the fridge for a few hours before you start cooking.

  • 1.5 pounds chicken breasts
  • 1/4 cup fresh lime juice
  • 1/3 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cumin

    Whisk the lime juice, olive oil, minced garlic, chopped cilantro, salt, pepper, and cumin together in a small bowl.

    Place the chicken breasts in a large bowl or a sealable plastic bag and pour the marinade over them.

    Cover the bowl or seal the bag and place it in the refrigerator for at least thirty minutes to let the flavors soak in.

    Heat a large skillet or grill pan over medium high heat.

    Add the chicken to the pan and cook for about six to eight minutes per side, or until the chicken is golden brown and cooked through.

    Remove the chicken from the pan and let it rest for five minutes before slicing to keep the meat juicy.
