There is something so special about the combination of tart citrus and buttery avocado. It is one of my favorite ways to brighten up a lunch or a side dish when I want something that tastes like pure sunshine. My family always asks for seconds because the colors look just as beautiful as the salad tastes.

My top tip for this recipe is to use a sharp knife to remove all the bitter white pith from the oranges. It makes the fruit taste much sweeter and keeps the texture perfect.

  • 2 large oranges, peeled and segmented
  • 1 large grapefruit, peeled and segmented
  • 1 ripe avocado, sliced
  • 1/4 cup shelled pistachios, roughly chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon orange juice
  • 1 teaspoon honey
  • A pinch of salt and black pepper

    Whisk together the olive oil, orange juice, honey, salt, and pepper in a small bowl until well combined.

    Arrange the orange and grapefruit segments on a large serving platter.

    Gently tuck the avocado slices in between the citrus pieces.

    Drizzle the dressing evenly over the fruit and avocado.

    Sprinkle the chopped pistachios over the top right before serving.

Serve this salad immediately so the avocado stays fresh and green. You can store leftover dressing in a glass jar in the fridge for up to three days, but it is best to toss the salad right before you eat.
