There is something so satisfying about a salad that actually keeps you full. This Greek quinoa salad is a favorite in my kitchen because it is healthy, colorful, and packs perfectly for lunch the next day.

My best tip is to rinse your quinoa well before cooking it. This simple step removes any bitter taste and makes sure your base is perfectly fluffy and light for all those crunchy veggies.

๐Ÿงบ Ingredients

  • 1 cup quinoa, rinsed well
  • 2 cups water or vegetable broth
  • 1 large cucumber, chopped
  • 1 pint cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Combine the quinoa and water in a medium saucepan. Bring the liquid to a boil, then cover and reduce the heat to low. Let it simmer for about 15 minutes or until the water is absorbed.

  2. 2

Remove the pan from the heat and let it sit covered for 5 minutes. Fluff the quinoa with a fork and spread it on a plate or tray to cool down to room temperature.

  3. 3

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper to create your dressing.

  4. 4

In a large salad bowl, combine the cooled quinoa, cucumber, tomatoes, red onion, olives, and parsley.

  5. 5

Pour the dressing over the salad and toss everything together gently until well coated.

  6. 6

Top the salad with the crumbled feta cheese right before you serve it.

๐Ÿ’ก Tips

This salad tastes even better after sitting in the fridge for an hour so the flavors can mingle. Keep the feta separate if you plan to store leftovers for more than two days to keep it fresh.
