My biggest tip is to use mangoes that are ripe but still slightly firm so they hold their shape when you chop them. If your mangoes are too soft, they tend to turn into a puree, and we really want those beautiful little cubes in the mix.

- 1/2 red onion, finely diced
- 1 jalapeño, seeded and minced
- 1/2 cup fresh cilantro, chopped
- Juice of 1 large lime
