There is something so satisfying about a bowl that has a little bit of everything. I love making these Mojo Salmon Bowls because they are colorful, filling, and really simple to put together on a busy weeknight. The tangy sauce pulls all the fresh ingredients together beautifully.

My biggest tip for this recipe is to let the salmon marinate for at least twenty minutes. It really helps the citrusy mojo flavor soak into the fish so every bite is juicy and delicious.

  • 2 salmon fillets
  • 1/2 cup mojo marinade
  • 2 cups cooked white or brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup fresh pineapple chunks
  • 1 ripe avocado, sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

    Place the salmon fillets in a shallow dish and pour the mojo marinade over them. Let the fish rest in the fridge for 20 minutes.

    Heat a nonstick skillet over medium heat and cook the salmon for about 4 to 5 minutes per side until it is golden and flakes easily with a fork.

    While the salmon cooks, warm the black beans in a small pot or the microwave.

    Top each bowl with a salmon fillet, a scoop of black beans, pineapple chunks, and fresh avocado slices.

You can store any leftovers in an airtight container in the fridge for up to two days, but I recommend keeping the avocado fresh and slicing it right before serving. These bowls are also great for meal prep if you keep the sauce on the side until you are ready to eat.
