There is nothing quite like a big bowl of fresh fruit salad when the weather gets warm. This dish is a favorite in my kitchen because it hits every note. You get the sweetness from the peaches, a lovely creaminess from the avocado, and a perfect crunch from the almonds. It really highlights the best of the season.

My top tip for this salad is to use peaches that are just slightly firm so they hold their shape when you toss them. If you make the dressing ahead of time, keep it in a small jar and only pour it over right before serving to keep your greens crisp.

๐Ÿงบ Ingredients

  • 4 cups fresh arugula or mixed salad greens
  • 2 ripe peaches, sliced
  • 1 ripe avocado, cubed
  • 1/3 cup sliced almonds
  • 2 tablespoons sugar
  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • Salt and black pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Place the sliced almonds and sugar in a small pan over medium heat, stirring constantly until the sugar melts and coats the almonds in a golden glaze.

  2. 2

Remove the almonds from the pan and spread them on parchment paper to cool completely.

  3. 3

Whisk the olive oil, lemon juice, honey, salt, and pepper together in a small bowl to make the dressing.

  4. 4

In a large serving bowl, add the salad greens, sliced peaches, and cubed avocado.

  5. 5

Drizzle the dressing over the salad and toss gently to coat everything.

  6. 6

Top the salad with the cooled sugared almonds and serve immediately.

๐Ÿ’ก Tips

Store any leftover dressing in a glass jar in the fridge for up to one week. If you have extra salad, it is best to eat it within a few hours because the avocado will start to brown.
