There is nothing quite like the flavor of fresh corn during the peak of summer. This simple salsa brings together sweet kernels with zesty lime and fresh cilantro to create a side dish that everyone at the table will love.

I personally enjoy keeping this recipe on hand for taco nights or backyard barbecues. It is light enough to serve as a snack with chips and hearty enough to pile onto grilled chicken or fish.

🧺 Ingredients

  • 4 cups fresh sweet corn kernels
  • 1 cup red onion, finely diced
  • 1 cup red bell pepper, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 1 fresh jalapeño, seeded and minced
  • 3 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

👩‍🍳Instructions

  1. 1

If you are using raw corn, boil or grill the ears briefly until tender then cut the kernels off the cob.

  2. 2

In a large mixing bowl, combine the corn kernels, red onion, bell pepper, cilantro, and jalapeño.

  3. 3

Drizzle the lime juice and olive oil over the mixture.

  4. 4

Season with salt and pepper then toss everything together until well combined.

  5. 5

Let the salsa sit for at least fifteen minutes before serving so the flavors have a chance to mingle.

💡 Tips

Store any leftovers in an airtight container in the refrigerator for up to three days. If you like a little extra heat, feel free to leave the seeds in your jalapeño, or serve this with a side of creamy avocado to balance the zest.
