There is something so satisfying about roasting vegetables until they get those perfectly browned, crispy edges. These cabbage steaks are one of my favorite ways to use a head of green cabbage because they turn a humble vegetable into a fancy side dish that goes with almost anything.

My secret for the best results is to make sure your cabbage slices are about an inch thick so they stay together while roasting. If you like a little extra flavor, feel free to sprinkle on some red pepper flakes or a bit of parmesan cheese before putting them in the oven.

  • 1 head green cabbage
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish

    Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.

    Remove any wilted outer leaves from the cabbage and trim the bottom stem.

    Slice the cabbage into rounds that are about one inch thick.

    Place the cabbage steaks on the prepared baking sheet in a single layer.

    Brush both sides of each steak with olive oil.

    Sprinkle the garlic powder, onion powder, salt, and pepper evenly over the cabbage.

    Roast for 25 to 30 minutes, flipping them halfway through, until the edges are golden brown and the center is soft.

💡 Tips

These taste best when served immediately while they are hot and crispy. If you have leftovers, keep them in an airtight container in the fridge for up to three days and reheat them in the oven to bring back the crunch.
