We make this dish all the time in my kitchen because it is so easy and reliable. After trying roasting and steaming, I always come back to this skillet method because it gives you the best texture every single time.

The secret is searing the stalks first and then adding a splash of water to steam them until they are tender. Adding the garlic at the very end keeps it fragrant and prevents it from burning, which makes a big difference in the flavor.

🧺 Ingredients

  • 1 bunch broccolini
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 3 tablespoons water
  • 1 tablespoon fresh lemon juice
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste

    Trim the bottom inch off the broccolini stalks and wash them well.

    Heat the olive oil in a large skillet over medium high heat.

    Add the broccolini to the pan in a single layer and let it cook undisturbed for about 3 minutes until the stalks begin to brown.

    Pour the water into the pan and cover it immediately with a lid to steam the broccolini for 2 or 3 minutes until the stalks are tender.

    Remove the lid and add the minced garlic, stirring for about one minute until fragrant.

    Remove the pan from the heat, sprinkle with lemon juice, Parmesan cheese, salt, and pepper before serving.

💡 Tips

Serve this dish immediately while it is still warm and crisp. If you have leftovers, store them in an airtight container in the fridge for up to two days and reheat them quickly in a dry skillet.
