There is something so special about the combination of juicy chicken, fresh mozzarella, and sweet basil. It is one of my favorite ways to get a restaurant quality meal at home without spending all evening in the kitchen.

I love serving this on busy weeknights when I want something healthy but flavorful. If you want an extra touch of sweetness, make sure you drizzle the balsamic glaze right before you serve it so the tomatoes stay nice and firm.

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 8 ounces fresh mozzarella cheese sliced
  • 2 large tomatoes sliced
  • 1/2 cup fresh basil leaves
  • 3 tablespoons balsamic glaze

    Preheat your outdoor grill or indoor grill pan to medium high heat.

    Brush the chicken breasts with olive oil and sprinkle them evenly with salt, pepper, and dried oregano.

    Place the chicken on the grill and cook for about 6 to 8 minutes per side until the internal temperature reaches 165 degrees Fahrenheit.

    During the last two minutes of cooking, top each piece of chicken with a few slices of fresh mozzarella and a slice of tomato.

    Close the grill lid or cover the pan to help the cheese melt.

    Remove the chicken from the heat and garnish with fresh basil leaves.

    Drizzle the balsamic glaze over the top just before serving.

You can serve this with a side of crusty bread or over a bed of baby spinach. If you have any leftovers, store them in an airtight container in the fridge for up to two days and reheat gently on the stove.
