These burrito bowls are a favorite in my house because everyone can customize their own plate. It is the perfect way to combine hearty taco meat with roasted sweet potatoes for a meal that feels special but is easy to pull together.

My top tip is to roast the sweet potatoes while you brown the beef to save time. You can also prepare the rice ahead of schedule to make dinner assembly quick and stress free.

  • 1 tablespoon taco seasoning
  • 2 large sweet potatoes, peeled and cubed
  • 2 cups cooked white or brown rice
  • 1 tablespoon olive oil

  • 1/4 cup fresh cilantro, chopped
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
