My secret for the best results is to warm your tortillas in the microwave for a few seconds before rolling them up. This makes them nice and pliable so they will not crack when you fill them.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 1 can red enchilada sauce
  • 8 flour tortillas
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup sour cream for serving
