There is nothing quite like a big pot of pasta soup on a chilly evening. My family absolutely loves how the Italian sausage adds such a savory depth to the broth while the pasta keeps everyone full and happy.

I always suggest adding the spinach at the very end of the cooking process. This keeps the leaves bright and fresh instead of letting them turn mushy in the hot soup.

  • 1 pound Italian sausage
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 8 ounces small pasta shells or rotini
  • 3 cups fresh baby spinach
  • 1/2 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
