  • 4 large bell peppers, tops removed and seeded
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 2 cups cooked white rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1.5 cups shredded cheddar cheese
  • 1 cup salsa
  • Fresh cilantro for garnish

    Preheat your oven to 375 degrees Fahrenheit.

    In a large skillet, brown the ground beef over medium heat until it is cooked through. Drain any excess grease.

    Add the cooked rice, black beans, corn, and half of the cheese into the skillet with the beef. Stir well until everything is combined.

    Stand the hollowed out bell peppers upright in a baking dish. Spoon the beef and rice mixture into each pepper until they are full.

    Pour a little water into the bottom of the baking dish to help steam the peppers, then cover the dish with foil.
