There is something so comforting about cooking dinner in a little foil package. These sausage packets are a favorite at my house because they are hearty and cleanup is practically nonexistent since you eat right out of the foil.

My best tip for these is to slice your vegetables into similar sizes so they cook through at the same time. If you like things a little crispy, feel free to pop the packets under the broiler for a minute after opening them up.

  • 1 pound smoked sausage, sliced into rounds
  • 4 medium carrots, sliced into coins
  • 1 large yellow onion, chopped
  • 2 large potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste

    Preheat your oven to 400 degrees Fahrenheit.

    Cut four large squares of heavy duty aluminum foil.

    In a large bowl, toss the sliced sausage, carrots, onions, and potatoes with the olive oil, oregano, garlic powder, salt, and pepper until everything is well coated.

    Divide the mixture evenly between the four foil squares.

    Bring the edges of the foil up to create a sealed packet, making sure to leave a little room for steam to circulate inside.

    Place the packets on a baking sheet and bake for 30 to 35 minutes until the potatoes are tender.

    Carefully open the packets to release the steam before serving.

Serve these right in the foil to keep things simple. You can store any leftovers in an airtight container in the fridge for up to three days and reheat them in the microwave.
