I love adding sweet potatoes and extra veggies to the mix because it adds such a nice texture and keeps things interesting. If you want a little extra crunch, try scooping these up with your favorite tortilla chips or serving them over some crisp greens.
🧺 Ingredients
- 1 pound lean ground beef
- 1 large sweet potato, peeled and diced into small cubes
- 1 onion, finely diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1/2 cup tomato sauce
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon apple cider vinegar
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Oil for cooking

These bowls store beautifully in the fridge for up to four days in airtight containers. If you want a fresh crunch, wait to add your chips or fresh toppings until right before you sit down to eat. You can also swap the ground beef for ground turkey if you prefer a lighter option.
