There is nothing quite like a warm bowl of chili on a chilly evening. This sweet potato version is a favorite in my kitchen because it is both filling and full of flavor thanks to the fire roasted tomatoes.

My best tip for this recipe is to cut your sweet potatoes into uniform cubes so they cook evenly. You want them to be tender but not mushy by the time the chili is finished simmering.

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 large sweet potatoes, peeled and cut into half inch cubes
  • 2 cans black beans, rinsed and drained
  • 1 can fire roasted diced tomatoes
  • 2 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste
  • Fresh cilantro and sour cream for serving
