There is something so comforting about the smell of brown sugar and cinnamon baking in the kitchen. These cookies are my take on those classic toaster pastries we all grew up eating, but in a much softer and more satisfying cookie form.

My best tip for success is to make sure your butter is softened to room temperature before you start mixing. It makes the dough much easier to handle and ensures the cookies bake up nice and tender.

  • 1 cup brown sugar, packed

  • 1/4 cup granulated sugar mixed with 1 tablespoon cinnamon for the filling
  • 1 cup powdered sugar for the icing
  • 2 tablespoons milk
  • 1/2 teaspoon cinnamon for the icing
  • Sprinkles for the top
