There is nothing quite like a homemade granola bar for a quick afternoon snack. My family loves these because they are much softer than the store bought kind, and they have just the right amount of chocolate in every single bite.

I find that the secret to getting them to hold together is pressing the mixture firmly into the pan before chilling. If you want to keep things neat, lightly grease your hands with a tiny bit of coconut oil so the honey and peanut butter do not stick to you while you work.

  • 2 cups rolled oats
  • 1 cup cashews, chopped
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/2 cup chocolate chips
  • 1/2 cup M&M candies

    Line an 8 by 8 inch baking pan with parchment paper so the bars are easy to remove later.

    In a large mixing bowl, combine the rolled oats and chopped cashews.

    Place the peanut butter and honey in a small saucepan over low heat. Stir them together until the mixture is smooth and combined.

    Pour the warm peanut butter mixture over the oats and cashews and stir well until everything is evenly coated.

    Let the mixture cool for a few minutes before stirring in the chocolate chips and M&M candies, as this prevents them from melting away.

    Press the granola mixture firmly into your prepared pan. Use the back of a spatula or your hands to pack it down tightly.

    Place the pan in the refrigerator for at least two hours to set before slicing into bars.

Store these bars in an airtight container in the refrigerator to keep them chewy for up to two weeks. If you prefer a nut free version, you can swap the cashews for sunflower seeds and the peanut butter for almond butter or sunflower butter.
