If you love the flavor of pecan pie but want a quick snack, these energy bites are for you. They use dates and maple syrup for natural sweetness and have that lovely nutty crunch we all crave during the holidays.

I like to make a big batch at the start of the week so I have something sweet ready to grab when I need a little boost. Just make sure to use high quality maple syrup for the best flavor.

๐Ÿงบ Ingredients

  • 1 cup raw pecans
  • 1 cup pitted Medjool dates
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground cinnamon

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Place the pecans in a food processor and pulse until they are finely chopped but still have a little bit of texture.

  2. 2

Add the pitted dates, maple syrup, vanilla, salt, and cinnamon to the food processor.

  3. 3

Process the mixture until it begins to stick together like a dough.

  4. 4

Scoop out small portions of the mixture and roll them into balls using your hands.

  5. 5

Place the energy bites on a tray and chill them in the refrigerator for about 10 minutes to help them firm up before serving.

๐Ÿ’ก Tips

Store these bites in an airtight container in the fridge for up to two weeks. If you want them to last longer, you can freeze them for up to three months. They are delicious served cold straight from the refrigerator.
