There is something so special about the combination of tart cranberries and sweet white chocolate. These bars are a staple in my kitchen whenever the weather starts to turn cold, and they are always the first thing to disappear at any family gathering.

The secret to getting that perfect texture is to make sure you do not overbake the base. You want the edges to be just golden while the center stays soft and chewy.

๐Ÿงบ Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup sweetened dried cranberries, chopped
  • 3/4 cup white chocolate chips
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar
  • 1/4 cup white chocolate chips, melted for drizzle

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and line a 9 by 13 inch baking pan with parchment paper.

  2. 2

In a large bowl, cream together the softened butter and brown sugar until the mixture is light and fluffy.

  3. 3

Beat in the eggs, vanilla extract, and almond extract until well combined.

  4. 4

Stir in the flour, baking powder, and salt until just mixed, then fold in the dried cranberries and white chocolate chips.

  5. 5

Spread the thick batter evenly into your prepared pan and bake for 18 to 22 minutes until the edges are lightly browned.

  6. 6

Allow the bars to cool completely in the pan on a wire rack.

  7. 7

For the frosting, beat the softened cream cheese with the powdered sugar until smooth, then spread it over the cooled bars.

  8. 8

Melt the remaining white chocolate chips in the microwave in short bursts, then drizzle it over the top of the frosting.

  9. 9

Let the frosting set before slicing into squares.

๐Ÿ’ก Tips

Store these bars in an airtight container in the refrigerator to keep the frosting fresh. They taste even better the next day after the flavors have had time to settle.
