There is something so comforting about a big bowl of warm, golden yellow rice. It is one of my favorite side dishes because it goes with just about everything, from grilled chicken to baked fish or even just a simple plate of beans.

My secret to the best yellow rice is using a little turmeric for that gorgeous color and a handful of sweet corn for a nice bite of texture. It is a simple recipe that turns plain grains into something truly special and delicious.

  • 2 tablespoons butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 1/2 cups long grain white rice
  • 3 cups chicken or vegetable broth
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 cup frozen or canned sweet corn
  • Fresh parsley for garnish

    Melt the butter in a large pot or deep skillet over medium heat.

    Add the diced onion and cook until it is soft and translucent, which takes about 5 minutes.

    Pour in the broth, then stir in the turmeric, garlic powder, and salt.

    Bring the liquid to a boil, then reduce the heat to low and cover the pot with a tight fitting lid.

    Simmer for 18 to 20 minutes, or until the liquid is fully absorbed and the rice is tender.

    Remove the pot from the heat and stir in the sweet corn while the rice is still hot.

Store any leftovers in an airtight container in the fridge for up to three days. This rice pairs perfectly with roast chicken or shrimp. If you like a little heat, add a pinch of cayenne pepper with your other spices.
