There is truly nothing like the taste of homemade lemon curd. It is much creamier than what you find at the store, and you can really taste the fresh lemon juice in every single bite.

My family loves this spread on warm scones or swirled into yogurt. If you want the smoothest texture, make sure to whisk your eggs well before you start cooking.

๐Ÿงบ Ingredients

  • 3 large lemons, zested and juiced
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 stick unsalted butter, cut into small cubes

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Whisk the eggs, sugar, lemon juice, and lemon zest together in a medium saucepan until smooth.

  2. 2

Set the pan over low heat and add the butter cubes.

  3. 3

Cook the mixture while stirring constantly with a wooden spoon or silicone spatula.

  4. 4

Keep stirring until the curd thickens enough to coat the back of your spoon, which should take about ten minutes.

  5. 5

Remove the pan from the heat immediately so the eggs do not scramble.

  6. 6

Strain the curd through a fine mesh sieve into a clean glass jar to catch any bits of zest or cooked egg.

  7. 7

Let the jar cool to room temperature before covering it and placing it in the fridge to set completely.

๐Ÿ’ก Tips

Store your lemon curd in an airtight container in the refrigerator for up to two weeks. It tastes wonderful served alongside toasted brioche, fresh berries, or even spread over fluffy pancakes.
