Hot Cowboy Dip
This hearty, cheesy dip is loaded with savory sausage and just enough spice to keep everyone reaching for more.
recipesbynani.comThis hot cowboy dip is my go to recipe whenever I have friends over for game day. It is perfectly hearty, packed with savory sausage, and uses three kinds of cheese to get that signature gooey texture everyone loves.
I really enjoy how simple this is to put together since you can make the entire thing in one skillet. It saves on cleanup, which means I get to spend more time hanging out with my guests instead of scrubbing pans in the kitchen.
🧺 Ingredients
- 1 pound Italian or breakfast sausage
- 8 ounces softened cream cheese
- 1 cup sour cream
- 8 ounces cubed Velveeta cheese
- 2 cups shredded pepper jack cheese, divided
- 1 can (15 ounces) diced tomatoes and green chiles, undrained
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (4 ounces) sliced jalapeños, undrained
- 1 cup frozen sweet corn
- 1/4 cup diced fresh jalapeños
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Sliced green onions for garnish
👩🍳Instructions
- 1
Preheat your oven to 350 degrees Fahrenheit.
- 2
Place a large oven safe skillet over medium high heat and add the sausage. Cook it while breaking it into crumbles until it is fully browned, which takes about 6 to 7 minutes. Drain off any excess grease.
- 3
Turn the heat down to medium low. Add the cream cheese, sour cream, Velveeta, half of the pepper jack cheese, tomatoes with green chiles, beans, canned jalapeños, corn, fresh jalapeños, chili powder, salt, and pepper.
- 4
Stir everything constantly until the cheeses are completely melted and smooth. Give it a quick taste and add a little more salt or pepper if you think it needs it.
- 5
Sprinkle the remaining pepper jack cheese over the top of the dip.
- 6
Bake in the oven for 13 to 15 minutes, or until the edges are bubbling and the cheese is golden brown. Remove from the oven, top with green onions, and serve warm.
💡 Tips
Serve this warm with plenty of tortilla chips, corn chips, or toasted bread slices. If you have leftovers, keep them in an airtight container in the fridge for up to 3 days and reheat them gently on the stove or in the microwave.
