There is something so special about the way these bright cereal pieces pop against the gooey marshmallow base. They are a absolute favorite in my kitchen whenever we need a quick sweet treat that makes everyone smile.

My best tip is to stir in the final two cups of cereal after the mixture has cooled down for just a minute. This keeps the marshmallows in the cereal from melting away, so you get that signature crunch in every single bite.

๐Ÿงบ Ingredients

  • 4 tablespoons unsalted butter
  • 10 ounces mini marshmallows
  • 6 cups Lucky Charms cereal, divided
  • 1/4 teaspoon vanilla extract

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Grease a 9 by 9 inch baking pan with butter or nonstick cooking spray.

  2. 2

Melt the butter in a large pot over low heat until it is completely liquid.

  3. 3

Add all of the marshmallows to the pot and stir constantly until they are fully melted and smooth.

  4. 4

Remove the pot from the heat and stir in the vanilla extract.

  5. 5

Gently fold in 4 cups of the cereal until it is evenly coated in the marshmallow mixture.

  6. 6

Fold in the remaining 2 cups of cereal quickly so they hold their shape.

  7. 7

Press the mixture into your prepared pan using a piece of wax paper or a greased spatula.

  8. 8

Let the bars cool at room temperature for about one hour before you slice them into squares.

๐Ÿ’ก Tips

Store these in an airtight container at room temperature for up to three days. You can press a few extra marshmallows on top right after you spread the mixture into the pan to make them look extra festive.
