This chicken souvlaki recipe is a staple in my house because it is quick to put together but tastes like it spent all day marinating. The yogurt in the marinade makes the chicken incredibly juicy every single time.

My favorite way to serve this is stuffed inside warm pita bread with a big dollop of tzatziki. If you want to keep things lighter, you can serve the skewers right over a big Greek salad or a bed of fluffy rice. Don't skip the rest time after grilling, as it keeps all those wonderful juices inside the meat.

  • 1.5 pounds boneless skinless chicken breasts or thighs, cut into 1 inch pieces
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 3 cloves garlic, minced

  • 1/4 cup plain Greek yogurt
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Wooden skewers, soaked in water for 30 minutes
