There is nothing quite like the smell of a homemade cherry pie baking in the oven. It brings back such sweet memories for me, and I know your family will love the bright cherry flavor and that buttery, flaky crust.

My biggest tip is to make sure your butter is ice cold before you start the dough. It makes all the difference in getting those perfect, crispy layers that everyone loves.

  • 2 1/2 cups all purpose flour
  • 1 cup unsalted butter, cubed and chilled
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 6 to 8 tablespoons ice water
  • 4 cups pitted fresh or frozen cherries
  • 3/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 tablespoon butter, cut into small pieces
  • 1 egg, beaten for egg wash
  • 1 tablespoon coarse sugar for sprinkling

    Mix the flour, sugar, and salt in a large bowl, then cut in the cold butter until the mixture looks like coarse crumbs.

    Add the ice water one tablespoon at a time, mixing gently until the dough just starts to come together.

    Divide the dough into two disks, wrap them in plastic, and let them chill in the fridge for at least one hour.

    In a separate bowl, toss the cherries with the sugar, cornstarch, and lemon juice until well coated.

    Roll out one disk of dough on a floured surface and place it into your pie dish.

    Pour the cherry mixture into the crust and dot the top with the small pieces of butter.

    Roll out the second disk of dough and place it over the cherries. Trim the edges, seal them, and cut a few slits in the top for steam to escape.

    Bake at 400 degrees Fahrenheit for 20 minutes, then lower the heat to 375 degrees and bake for another 30 to 40 minutes until the crust is golden and the filling is bubbling.

Let the pie cool completely on a wire rack before slicing so the filling has time to set. You can store any leftovers covered at room temperature for two days or in the fridge for up to four days.
