There is nothing quite like a big bowl of creamy chicken noodle soup when you need a little comfort. This recipe is a favorite in my house because it turns simple ingredients like leftover chicken and tender noodles into a meal that feels special but is very easy to pull together.

I love adding a handful of fresh spinach at the very end to give the soup a bright splash of color. If you want an extra touch of richness, a small splash of heavy cream stirred in right before serving makes the broth feel extra silky and smooth.

๐Ÿงบ Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1/4 cup all purpose flour
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken
  • 8 ounces wide egg noodles
  • 2 cups fresh baby spinach
  • 1/2 cup heavy cream
  • salt and pepper to taste

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Melt the butter with the olive oil in a large pot over medium heat.

  2. 2

Add the onion, carrots, and celery. Cook until the vegetables start to soften, which usually takes about five minutes.

  3. 3

Stir in the garlic and cook for another minute until it smells wonderful.

  4. 4

Sprinkle the flour over the vegetables and stir well to coat them. Cook for one minute to remove the raw flour taste.

  5. 5

Slowly pour in the chicken broth while whisking constantly to keep the mixture smooth.

  6. 6

Bring the soup to a gentle simmer and add the egg noodles. Cook according to the package directions until the noodles are tender.

  7. 7

Stir in the shredded chicken and heavy cream. Let it heat through for a few minutes.

  8. 8

Turn off the heat and stir in the fresh spinach until it wilts into the soup. Taste and add salt or pepper as needed before serving.

๐Ÿ’ก Tips

This soup is best served hot with a side of crusty bread for dipping. If you have leftovers, keep in mind that the noodles will absorb the broth over time, so you might need to add a splash of extra broth when reheating. Store it in an airtight container in the fridge for up to three days.
