Peanut butter ramen is a wonderful surprise that tastes like a cozy shortcut to restaurant style noodles. The creamy peanut base balances perfectly with spicy chili, savory garlic, and fresh ginger for a meal that feels special without any fuss.

My top tip is to save a little bit of the hot noodle water to stir into your sauce at the end. It makes the texture extra silky and helps the sauce coat every single strand of those noodles.

  • 2 packs of ramen noodles, discard the seasoning packets
  • 3 tablespoons creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon chili garlic sauce or sriracha
  • 1 teaspoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 2 tablespoons hot noodle water
  • 1 green onion, sliced
  • 1 teaspoon toasted sesame seeds

    Boil the ramen noodles according to the package directions, but make sure to reserve 2 tablespoons of the starchy cooking water before you drain them.
