Nani's Easy Ham Fried Rice
A simple and comforting one pan meal that makes the best use of your leftover holiday ham.
recipesbynani.comThere is nothing quite like a quick fried rice recipe to pull a busy weeknight dinner together. This dish is a favorite in my house because it is so flexible and uses up those extra bits of ham sitting in the fridge.
My top tip for the perfect texture is to use cold, day old rice. If you use freshly cooked warm rice, it tends to get a bit mushy in the pan. Starting with cold grains helps each piece stay distinct and slightly chewy.

- 3 cups cooked white rice, chilled
- 1 cup diced cooked ham
- 1 cup frozen peas and carrots
- 2 large eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 green onions, thinly sliced
- 2 tablespoons vegetable oil
- 1 clove garlic, minced

Heat one tablespoon of vegetable oil in a large skillet or wok over medium high heat.

Add the diced ham to the pan and cook until it starts to brown slightly, then remove the ham and set it aside.

Add the remaining tablespoon of oil to the same pan and stir in the garlic, peas, and carrots, cooking for about three minutes until tender.

Push the vegetables to the side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until they are just set.

Add the cold rice and the cooked ham back into the pan.

Drizzle the soy sauce and sesame oil over the rice, then stir everything together until the rice is heated through and well coated with the sauce.

Turn off the heat and stir in the sliced green onions before serving.

You can store any leftovers in an airtight container in the fridge for up to three days. To reheat, just splash a little water over the rice and warm it in a skillet over medium heat until it is steaming hot.
