Cowboy cookies are a classic favorite for a reason. They have everything you could ever want in a cookie, like toasted pecans, sweet coconut, and plenty of chocolate chips. I love them because they are substantial enough to keep you full and sweet enough to satisfy any craving.

My best tip is to use old fashioned rolled oats rather than the quick cooking kind. The texture turns out so much better, giving the cookies that nice chewiness we all love. Make sure not to overbake them so the centers stay soft.
