This salad is one of my absolute favorite things to make when the weather gets a little chilly. It brings together sweet fruit, tart cranberries, and crunchy nuts for a combination that keeps everyone reaching for a second helping.

I find that making the dressing just a little bit ahead of time helps the flavors mingle beautifully. It is a wonderful side dish for holiday meals or just a simple weeknight dinner.

  • 5 ounces mixed salad greens
  • 1 sliced apple
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, toasted
  • 1/4 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon pure maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

    Whisk the olive oil, apple cider vinegar, maple syrup, and Dijon mustard together in a small bowl until smooth.

    Add the sliced apples, dried cranberries, pecans, and feta cheese on top of the greens.

If you want to make this ahead of time, keep the dressing in a separate jar and only toss it with the salad right before you sit down to eat. You can store leftover salad in the fridge for a day, but it is best enjoyed fresh.
