This Fattoush salad is one of my favorite things to toss together when I want something fresh and light. It is packed with crunchy vegetables and fresh herbs, making it a wonderful side dish for any Middle Eastern meal you are planning.

My top tip for this recipe is to add the crispy pita chips right before you serve the salad. This keeps them from getting soggy so you get that perfect crunch in every single bite.

  • 2 cups chopped romaine lettuce
  • 1 cup diced cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1 cup pita bread, toasted and torn into bite sized pieces
  • 1/4 cup pomegranate arils
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon pomegranate molasses
  • 1 clove garlic, minced
  • Salt and pepper to taste

    Whisk the olive oil, lemon juice, pomegranate molasses, minced garlic, salt, and pepper together in a large mixing bowl to create the dressing.

    Add the chopped romaine, cucumber, tomatoes, parsley, and mint to the bowl with the dressing.

    Toss everything together until the vegetables are evenly coated.

    Gently fold in the toasted pita pieces and top the salad with the pomegranate arils right before serving.

You can turn this salad into a main course by adding a cup of cooked chickpeas or grilled chicken. Store any leftover dressing in a small jar in the fridge for up to one week.
