My crispy zucchini is a favorite in our house because it turns a simple garden staple into a snack that disappears from the plate in seconds. The secret is getting the breading just right so it stays light and crunchy while the inside remains tender.

Make sure your oil is hot enough before you start frying so the zucchini browns beautifully instead of soaking up too much grease. I love serving these as an appetizer, but they make a wonderful side dish for a big family dinner too.

  • 2 medium zucchini, sliced into thin rounds
  • 1/2 cup all purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian seasoned breadcrumbs

  • Salt and black pepper to taste
  • Marinara, ranch, or garlic aioli for serving
