There is nothing quite like coming home to the smell of a hearty roast waiting for you in the kitchen. This Mississippi Pot Roast is special because it uses a tangy mix of peppers and spices that make the meat fall apart on your fork every single time.

My secret tip for this dish is to make sure you use a good quality chuck roast with plenty of marbling. The fat is what keeps the beef juicy while it slowly cooks in the juices. You can serve this over mashed potatoes or with a side of steamed vegetables.

  • 3 to 4 pound beef chuck roast
  • 1 packet ranch dressing mix
  • 1 packet au jus gravy mix
  • 1/2 cup unsalted butter
  • 8 to 10 whole pepperoncini peppers
  • 2 tablespoons juice from the pepperoncini jar

    Place your chuck roast into the bottom of the slow cooker.

    Sprinkle the dry ranch dressing mix and the au jus gravy mix evenly over the top of the beef.

    Place the butter on top of the seasoned meat.

    Arrange the pepperoncini peppers around the roast and pour the pepper juice over everything.

    Cover the slow cooker and cook on low for 8 hours or on high for 4 hours until the beef is very tender.

    Shred the meat with two forks right in the slow cooker before serving.
