There is something so special about bringing a bowl of this bright pink hummus to the table. It is a fantastic way to add some extra color to your snack spread while keeping things nutritious and light.

My favorite trick for this recipe is to roast the beets ahead of time. Once they are tender and cooled, the rest of the dip comes together in just a few minutes using your food processor.

  • 2 medium beets, roasted and peeled
  • 1 can (15 ounces) chickpeas, rinsed and drained
  • 1/4 cup tahini
  • 1 clove garlic
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • Salt to taste

    Place the roasted and peeled beets into a food processor and pulse until they are roughly chopped.

    Add the chickpeas, tahini, garlic, lemon juice, olive oil, and cumin to the processor.

    Blend the mixture until it is smooth and creamy. If the hummus seems too thick, you can add a tablespoon of water at a time until you reach your desired consistency.
