Peanut butter meltaways have been a favorite in my kitchen for years. They are simple to make and always disappear the fastest at parties or family gatherings because everyone loves that silky texture.

My secret to getting them just right is using a good quality chocolate and making sure your peanut butter is smooth. Keep them in the fridge until the very last second so they stay perfectly firm before you serve them.

  • 1 cup creamy peanut butter
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 12 ounces semi sweet chocolate chips
  • 2 tablespoons vegetable shortening

    In a large mixing bowl, beat the peanut butter and softened butter together until the mixture is smooth.

    Gradually add the powdered sugar and vanilla extract to the peanut butter mixture. Stir until everything is well combined and creates a dough consistency.

    Roll the peanut butter mixture into small bite sized balls and place them on a parchment lined baking sheet.

    Flatten the balls slightly with the palm of your hand or the bottom of a glass.

    Place the tray in the freezer for about 15 minutes to firm up.

    While the candies chill, melt the chocolate chips and shortening together in a microwave safe bowl. Heat in 30 second intervals, stirring in between, until the chocolate is completely smooth.

    Use a fork to dip each peanut butter piece into the melted chocolate. Tap the fork against the side of the bowl to let the excess chocolate drip off.

    Place the dipped candies back onto the parchment paper and let them sit until the chocolate is set.

Store these in an airtight container in the refrigerator to keep them cool and firm. If you want a little crunch, you can sprinkle a tiny pinch of sea salt on top of the chocolate before it sets.
