When busy weeknights hit, this one pan meal is exactly what I reach for. It is cozy, fresh, and saves me from washing a mountain of pots after dinner is done.

My favorite trick for this recipe is to keep the heat at a gentle simmer while the orzo cooks in the broth. The sausage adds such a lovely savory note that pairs perfectly with a big scoop of basil pesto.

  • 1 tablespoon olive oil
  • 12 ounces chicken sausage, sliced into rounds
  • 1 pint cherry tomatoes
  • 1 1/2 cups dry orzo pasta
  • 2 1/2 cups chicken broth
  • 1/3 cup prepared basil pesto
  • 1 ball of burrata cheese, optional
  • Salt and black pepper to taste

    Heat the olive oil in a large skillet over medium heat.
