These Pumpkin Sheet Cake Bars are a long time favorite in my kitchen. The cake is perfectly spiced and stays incredibly moist, making it the ideal treat to share at potlucks or cozy family gatherings.

Since this recipe bakes in a jelly roll pan, it is perfect for feeding a crowd. Just make sure you use pure pumpkin puree instead of canned pie filling to get that wonderful flavor we all love.

๐Ÿงบ Ingredients

  • 15 ounces pumpkin puree
  • 1 cup canola oil
  • 2/3 cup granulated sugar
  • 2/3 cup packed dark brown sugar
  • 1/4 cup milk
  • 4 large eggs
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 8 ounces cream cheese, softened
  • 1/2 cup butter, softened
  • 2 teaspoons vanilla extract
  • 4 2/3 cups powdered sugar

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 350 degrees Fahrenheit and lightly spray a 10 by 15 inch jelly roll pan with nonstick cooking spray.

  2. 2

In a large bowl, whisk together the pumpkin puree, oil, granulated sugar, brown sugar, milk, and eggs until the mixture is smooth.

  3. 3

In a separate medium bowl, whisk together the flour, baking powder, cinnamon, baking soda, nutmeg, cloves, and salt.

  4. 4

Add the dry ingredients to the pumpkin mixture and stir until everything is well combined and smooth.

  5. 5

Pour the batter into your prepared pan and bake for 20 to 25 minutes, or until a toothpick comes out clean and the center springs back when touched.

  6. 6

Let the cake cool down completely in the pan.

  7. 7

While the cake cools, beat the cream cheese, softened butter, and vanilla extract together using a hand mixer or stand mixer until smooth.

  8. 8

Slowly mix in the powdered sugar until your frosting is creamy, then spread it evenly over the cooled cake before slicing.

๐Ÿ’ก Tips

Store these bars in the refrigerator because of the cream cheese frosting. They stay nice and moist for a few days, so they are great for making ahead of time.
