This berry icebox cake is one of my favorite things to pull out of the fridge on a warm afternoon. It layers crispy graham crackers with a fluffy cream cheese mixture and fresh berries, and after a few hours of chilling, it turns into something that tastes just like a homemade cake.

Since you do not need to turn on the oven, it is the perfect dessert for hot days or when you are hosting a crowd. I love making this ahead of time because it actually tastes better the next day once the graham crackers have softened up.

  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups heavy whipping cream
  • 1 box graham crackers
  • 2 cups fresh strawberries, sliced
  • 1 cup fresh blueberries

    Beat the softened cream cheese, sugar, and vanilla in a large bowl until the mixture is completely smooth.

    In a separate bowl, whip the heavy cream until stiff peaks form.

    Gently fold the whipped cream into the cream cheese mixture until well combined.

    Spread a thin layer of the cream mixture on the bottom of a 9 by 13 inch baking dish.

    Arrange a layer of graham crackers over the cream, breaking them as needed to fit the pan.

    Spread about one third of the remaining cream over the crackers and top with a portion of the sliced berries.

    Repeat the layers of crackers, cream, and berries until you have used everything up, ending with a layer of cream and berries on top.

    Cover the dish and refrigerate for at least 6 hours, though overnight is best, to let the crackers soften into a cake texture.

๐Ÿ’ก Tips

Store any leftovers in the refrigerator covered tightly with plastic wrap for up to 3 days. If you want a prettier presentation, save some fresh berries to arrange on top right before you serve it.
