There is something so satisfying about a salad that leaves you feeling full and energized. This Vietnamese style chicken salad is one of my absolute favorites because it balances fresh herbs and crisp vegetables with a tangy dressing that wakes up your taste buds.

I love making this for a quick lunch or a light dinner. My top tip is to let the chicken soak in a little bit of the dressing before you toss everything together. It helps all those bright flavors really soak into the meat.

  • 2 cups cooked shredded chicken breast
  • 3 cups shredded green cabbage
  • 1 large carrot, julienned or grated
  • 1 cup cucumber, sliced into thin matchsticks
  • 1/2 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, torn
  • 1/4 cup peanuts, crushed
  • 3 tablespoons lime juice
  • 2 tablespoons fish sauce
  • 1 tablespoon honey
  • 1 fresh red chili, finely sliced
