There is something so nostalgic about biting into a chewy Rice Krispies treat. When you add a scoop of vanilla ice cream in the middle, it turns into an incredible dessert that feels like a party in your hand. My grandkids ask for these every single time they visit during the summer months.

My best tip is to work quickly when assembling these. If the ice cream starts to melt too much, just pop the whole tray into the freezer for ten minutes before you finish pressing the tops down. It keeps everything neat and easy to hold.

  • 4 tablespoons butter
  • 10 ounces mini marshmallows
  • 6 cups crispy rice cereal
  • 1 quart vanilla ice cream, slightly softened
