This meal is a favorite in my house because it is so easy to clean up afterward. I love how the zucchini keeps the chicken meatballs moist while the bell peppers add a lovely sweetness to every bite.

My best tip for this recipe is to squeeze as much water as possible out of your shredded zucchini before mixing it into the meat. This ensures your meatballs hold their shape beautifully in the oven without getting soggy.

๐Ÿงบ Ingredients

  • 1 pound ground chicken
  • 1 medium zucchini, grated and squeezed dry
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon ground ginger
  • 2 bell peppers, chopped into bite sized pieces
  • 1 tablespoon olive oil
  • 1 can full fat coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

๐Ÿ‘ฉโ€๐ŸณInstructions

  1. 1

Preheat your oven to 400 degrees Fahrenheit and line a large baking sheet with parchment paper.

  2. 2

In a large bowl, combine the ground chicken, grated zucchini, breadcrumbs, egg, garlic powder, and ginger. Mix until just combined.

  3. 3

Shape the mixture into small meatballs and place them on the prepared baking sheet.

  4. 4

Scatter the chopped bell peppers around the meatballs and drizzle everything with olive oil.

  5. 5

Bake for 20 minutes or until the meatballs are cooked through.

  6. 6

While the meatballs bake, whisk the coconut milk and red curry paste together in a small saucepan over medium heat. Simmer for 5 minutes and stir in the lime juice.

  7. 7

Pour the warm sauce over the meatballs and peppers once they come out of the oven and garnish with fresh cilantro before serving.

๐Ÿ’ก Tips

Serve these meatballs over steamed jasmine rice or with warm naan bread to soak up the extra sauce. If you have leftovers, store them in an airtight container in the fridge for up to three days and reheat them gently on the stove.
